Easter Pancake Stack

Celebrate Easter in style!

This Easter Pancake Stack is a fun, tasty alternative to hot cross buns. Turn our fluffy pancakes into a festive treat by adding cream, topped with crunchy candy-coated chocolate eggs and sprinkles. It’s a simple recipe that will make Easter feel a little bit special. Perfect for little helpers in the kitchen, this stack comes together quickly and the bunny cut out makes a joyful centrepiece for the whole family.

Ingredients

Serves 2

  • 1 packet of Marcel’s Happy Pancakes

  • 1 egg white, gently whisked

  • Sprinkles

  • Mascarpone or whipped cream

  • Chopped Easter Eggs (we used candy coated chocolate eggs)

Method

Using a bunny shaped cutter (or any other Easter-themed cutter you might have) carefully cut a bunny from a Happy Pancake, set the scraps to the side (or give to a grateful kid to gobble up!).

Tip the contents of a packet of sprinkles into a saucer. Brush egg white along the edges of the bunny then press into the sprinkles. Set aside. Brush 3 Happy Pancakes around the edges with egg white then press these into the sprinkles also.

Stack the pancakes onto a plate then add a dollop of mascarpone or whipped cream in the middle of the top pancake. Gently insert a toothpick into the bunny cut-out then poke this into the top pancake behind the mascarpone/cream. Scatter over sprinkles followed by the chopped Easter eggs then serve!
