

Tiramisu Crepe Cake

Ingredients
Serves: 1 cake
150ml strong-brewed coffee
125g sugar
1 teaspoon vanilla extract
500g mascarpone
275ml cream
2 x packets Marcel’s Sweet Crepes or Gluten Free Crepes
Cocoa to dust
Method
Put the coffee and the sugar into a small heavy-bottomed saucepan, bring to the boil then continue to boil for approximately 4 minutes or until the liquid has reduced to a syrup. You want to end up with about 75-85ml. Remove from the heat, pour into a little jug and stir in the vanilla. If you don’t have quite enough liquid you can top it up with some boiling water. Leave to cool.
Put the mascarpone into a bowl and pour in the cool coffee syrup. Beat until smooth. In a separate bowl whip the cream until soft peaks form. Tip in about a third of the cream into the mascarpone and whip until it has combined. Then tip in the remaining cream and fold through with a spatula until smooth. Spoon 175g of the mixture into a piping bag with a large plain nozzle and set aside.
Put a crepe onto a cake plate. Spoon a dollop of the mascarpone mixture onto the crepe then spread it out to the edges using a spoon or spatula. Sprinkle over some cocoa and then repeat this with the next 10 crepes. Put the last crepe on the stack then pipe out rounds of the mascarpone on top followed but a good dusting of cocoa. Put into the fridge for 4 hours or overnight to set before slicing.
